The variation gets its name from the number of cards that are dealt to each player. Because of the number of cards that are potentially required in a game, usually 7 Card Stud poker is restricted to anywhere between three to seven players only.
Three cards are dealt to each player, two down and one facing up. Then there are 3 subsequent betting rounds, one card is dealt to each player per round. These 3 cards are all dealt face up. Then in the last round, the last card is dealt face down.

Being able to see some of the opponent's cards allows one to make informed decisions by keeping track of the cards in play.
Most novices play too many opening hands. When players play with weak opening hands, they're often forced to fold later when they realize they can't win. Experienced players will carefully weigh the hands they hold and play only about 35% of them.
